I have been on a major comfort food kick lately. We have recently had an unusual bout of bad winter weather, which is most unusual for this part of the country. Being stuck inside and smelling this yummy dish cook all day, this recipe for Slow Cooker Beef Tips with Mushroom Gravy absolutely hit the spot.

Beef Tips with Mushroom Gravy

This classic dish is super quick and easy to throw together and then you can sit back, wrapped in a blanket by the fire and let the magical slow cooker to the work. This is so good served over egg noodles, rice or mashed potatoes. Steam a green veggie on the side and you have a delicious and comforting meal.

What could be more comforting on a cold winter night than tender beef tips smothered with a delicious mushroom gravy? Cooked low and slow all day, this is one dish that is hard to beat!

I found this recipe by Alyssa Rivers at The Recipe Critic some time ago and it never disappoints. There is only one slight modification that I make, for no other reason than because it is the way I have always made beef tips. I put the meat into a gallon-size zip top back along with salt, pepper and maybe a 1/4 c of flour and shake until they’re lightly covered in flour before searing. Slow Cooker Beef Tips with Mushroom Gravy

Ingredients

  • 2 Tbsp olive oil
  • 3 lb stew meat
  • salt and pepper (to taste)
  • 3 c beef broth
  • 1 pkg dry onion soup mix
  • 2 c mushrooms sliced (I like baby bella)
  • 1 Tbsp Worcestershire sauce
  • 3 garlic cloves minced
  • 1 small onion diced
  • 1/4 c water
  • 3 Tbsp cornstarch

Directions

  1. Heat large skillet to med-high heat and all olive oil. Working in batches, salt and pepper the meat and sear on all sides. Move the meat to the slow cooker.
  2. Pour in the beef broth, add the onion soup mix, onions, mushrooms, garlic and Worcestershire sauce. Cover and cook on low 5-6 hours or high 3-4 hours.
  3. 30 minutes prior to completion, mix the water and cornstarch in a small bowl and stir in to the slow cooker. This will help to thicken the gravy.
  4. Serve over egg noodles, mashed potatoes or rice with a veggie on the side.

Note: For nights when I’m really in a hurry or too tired to do better, I’ll serve this with instant pashed potatoes or 90 second microwave rice.
