Simple Egg Drop Soup. Who knew it was so stinkin’ easy to make? I was having a major craving for it one day and took to the internet to find a recipe and came across this one from Ali at Gimme Some Oven. It is utter perfection and better than any takeout I’ve ever had!

We make this all the time. Being cooped up in the house during quarantine I can’t seem to keep groceries around. With the whole family being home all the time we burn through groceries super fast. This is one of those recipes that is quick and easily made with on-hand items when there isn’t much to choose from and soooo good!

Ingredients

  • 4 cups Chicken Stock
  • 2 Tbsp. Cornstarch
  • 1 tsp. Ground Ginger
  • 1/4 teaspoon Garlic Powder
  • 3 Eggs
  • 1/2 tsp. Sesame Oil
  • 3 Green Onions, thinly sliced
  • Salt & Pepper to taste

Directions

  1. Whisk together broth, cornstarch, ginger and garlic powder in a medium sauce pan until smooth.
  2. Heat over high heat until the broth simmers, stirring occasionally.
  3. Meanwhile, whisk the eggs in a measuring cup
  4. Once the broth reaches a simmer, use a fork to slowly stir in a circle, creating a whirlpool and slowly pour eggs in while stirring
  5. Remove pot from heat and stir in the sesame oil, green onions and corn (if using) until combined.
  6. Add salt and pepper to taste
  7. Serve immediately

Note: I sometimes add some frozen corn to it to give it a little more substance. It’s a delicious addition! Also, dried chives will work in a pinch if you don’t happen to have green onions on hand.
